Gingered Chicken with Caramelized Onion and Stuffed Zucchini

I've been successful with following the South Beach diet thus far and I've actually lost 2 pounds! One piece of advice though...even though I love fish, do not fix your first meal of a diet as fish. It is the typical diet food and I was feeling unsure about the diet after eating it. Instead, start with THIS meal! I was raving over and over about this meal... I picked out the foods and my husband fixed the dinner. We used the Gingered Chicken Breast recipe from my South Beach diet book (which I believe is from 2003?), made caramelized onions and then made stuffed zucchini.

To make the stuffed zucchini, you cut your zucchini in half lengthwise, scoop out the insides and place them in a bowl. Put the zucchini halves in a baking dish. Mix in any ingredients you want with the zucchini innards, then stuff into the zucchini halves and bake for 15-20 minutes at 350 degrees. We used artichokes and feta cheese. SO YUMMY!

To make caramelized onions, first put some oil in a skillet and heat on medium high. Cut the ends off the onion and take the skin off. Cut the onion in half and then cut into strips. When the oil is rippling, place the onion in the skillet and cook until browned to your liking. Make sure you stir it frequently to keep from burning.

 Here is the recipe for the Gingered Chicken Breast!

1 Tbsp fresh lemon juice
1.5 tsps. grated fresh ginger
.5 tsp. freshly ground black pepper
2 cloves garlic
4 boneless, skinless chicken breasts

  1. Combine the lemon juice, ginger, pepper and garlic in a small bowl.
  2. Place the chicken breasts in a deep bowl. Pour the ginger mixture over the breasts, turning once to coat both sides. Cover and refrigerate for 2 hours.
  3. Spray a large nonstick skillet with cooking spray. Heat the skillet on medium-high until hot. Add the chicken. Cook, turning once, until tender, about 10 minutes.
